Zucchini Mint Salad
serves 4
Ingredients
4 small zucchini, 1/8" slice
3 to 4 sprigs mint, chiffonade
1 ea lemon, zested
2 T olive oil
Instructions
Layer the zucchini on a serving platter. Zest the lemon over the zucchini, squeeze the lemon over the zucchini, drizzle with olive oil, salt to taste, garnish with the mint.
Serve cold.
